Ingredients

Instructions

  1. Cook coconut rice according to package instructions, using coconut milk instead of water for extra flavor.
  2. Season chicken breasts with salt and pepper. Heat olive oil in a pan over medium-high heat and cook the chicken until golden brown and cooked through, about 6-7 minutes per side.
  3. Add pineapple slices to the pan in the last few minutes of cooking and grill until caramelized.
