Description

Delicious and tender ground chicken meatballs baked in marinara sauce, perfect for family dinners or meal prep.


Ingredients

  • 2 lbs ground chicken
  • ½ cup Italian breadcrumbs
  • 1 egg
  • 2 cloves garlic (minced)
  • ½ cup grated Parmesan
  • 1 tsp Italian seasoning
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • 1 cup marinara sauce

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Combine all ingredients in a large bowl. Mix gently until just combined.
  3. Form mixture into 1-inch meatballs and place on the prepared baking sheet, leaving space between each.
  4. Brush tops of meatballs with olive oil if desired for browning.
  5. Bake for 15 minutes, or until meatballs reach an internal temperature of 165°F (74°C) and are lightly browned.
  6. Spoon marinara sauce over meatballs before serving.
  7. Serve as desired, with pasta, rice, or in rolls for meatball subs.

Notes

For better flavor, use freshly minced garlic and freshly grated Parmesan cheese.
