- 1 pinch kosher salt (generous)
- 3/4 pound boneless skinless thin-cut chicken breast
- 3/4 pound boneless skinless chicken thighs
- 2 cups cilantro lime rice
- Avocado (quartered or sliced)
- Pickled red onion
- Thinly sliced radish
- JalapeƱos (sliced raw or pickled)
- Finely chopped cilantro (for garnish)
Instructions
- Prepare the Rice and Toppings: Start by cooking your cilantro lime rice according to your favorite recipe or package instructions, ensuring it’s fluffy and full of flavor. Prepare your toppings by slicing avocados, jalapeƱos, and radishes to enhance the bowl’s aesthetic and taste.
- Make the Street Corn Salsa: In a bowl, combine thawed sweet corn, Greek yogurt, mayonnaise, lime juice, honey, Everything But The Elote Seasoning, and chopped cilantro. Season with a pinch of kosher salt to taste.
- Grill the Chicken: Rub the chicken breasts and thighs with avocado oil and Mexican street taco seasoning. Grill over medium heat for about 6-7 minutes on each side or until fully cooked.
- Build the Rice Bowls: Once everything is cooked, layer the bowls starting with cilantro lime rice, followed by sliced chicken, and top with the vibrant street corn salsa. Garnish with avocado, pickled red onion, sliced radish, and additional cilantro for a pop of color and flavor.
