- 2 teaspoons Everything But The Elote Seasoning
- 2 tablespoons finely chopped cilantro
- 2 tablespoons avocado oil (or other oil safe for high heat grilling)
- 2 tablespoons Mexican street taco seasoning
- 1 pinch (generous) kosher salt
- 2¼ pounds boneless skinless thin-cut chicken breast and thighs
- 2 cups cilantro lime rice
- Avocado (quartered or sliced)
- Pickled red onion
- Thinly sliced radish
- Jalapeños (sliced raw or pickled)
- Finely chopped cilantro (for garnish)
Instructions
- Prepare the rice and any desired toppings: Start by cooking the cilantro lime rice according to package instructions, keeping it warm as you prepare the rest of the dish.
- Make the street corn salsa: In a mixing bowl, combine sweet corn, Greek yogurt, mayonnaise, cotija cheese, lime juice, honey, Everything But The Elote seasoning, and chopped cilantro. Mix well until evenly coated.
- Grill the chicken: Preheat the grill over medium heat. Season the chicken with Mexican street taco seasoning and kosher salt. Grill the chicken for about 5-7 minutes on each side or until fully cooked and charred.
- Build the rice bowls: Start with a base of cilantro lime rice, then add slices of grilled chicken, and top generously with street corn salsa. Finally, add your choice of toppings like avocado, pickled red onion, radish, and jalapeños.
Notes
For extra flavor, allow the chicken to marinate in the taco seasoning prior to grilling. Store leftover chicken and salsa in airtight containers.
