Description

Smoky, sweet, and savory grilled BBQ chicken that brings family and friends together over delicious flavors.


Ingredients

  • 2 tablespoons packed light or dark brown sugar
  • 1 1/2 teaspoons paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried ground mustard
  • 1 teaspoon kosher salt
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon freshly ground black pepper
  • 2 1/2 pounds bone-in, skin-on chicken thighs, drumsticks, or a combination
  • Vegetable or canola oil, for the grill
  • 1/2 cup tomato- or ketchup-based barbecue sauce, plus more for serving

Instructions

  1. Stir together the brown sugar, paprika, cumin, garlic powder, onion powder, ground mustard, kosher salt, chili powder, and black pepper in a large bowl.
  2. Pat the chicken dry with paper towels and rub the spice mixture all over and under the skin. Let it sit at room temperature for 20 minutes or refrigerate overnight.
  3. Preheat the gas grill to medium heat (about 350°F) or prepare a charcoal grill.
  4. Oil the grill grates and place the chicken skin-side down, cooking undisturbed for 3-4 minutes until grill marks appear. Flip and cook for another 1-2 minutes.
  5. Reduce the heat to low or move the chicken to indirect heat. Brush with barbecue sauce, cover, and grill for 5 minutes. Flip and continue to brush with sauce every 5 minutes until cooked through (~10 more minutes).
  6. Serve with additional barbecue sauce if desired.

Notes

Allowing the chicken to marinate longer enhances flavors. Keep an eye on the heat for even cooking and avoid constant flipping for a crispy skin.
