- 2 tablespoons packed light or dark brown sugar
- 1 1/2 teaspoons paprika
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried ground mustard
- 1 teaspoon kosher salt
- 1/2 teaspoon chili powder
- 1/4 teaspoon freshly ground black pepper
- 2 1/2 pounds bone-in, skin-on chicken thighs, drumsticks, or a combination
- Vegetable or canola oil, for the grill
- 1/2 cup tomato- or ketchup-based barbecue sauce, plus more for serving
Instructions
- Stir together the brown sugar, paprika, cumin, garlic powder, onion powder, ground mustard, kosher salt, chili powder, and black pepper in a large bowl.
- Pat the chicken dry with paper towels and rub the spice mixture all over and under the skin. Let it sit at room temperature for 20 minutes or refrigerate overnight.
- Preheat the gas grill to medium heat (about 350°F) or prepare a charcoal grill.
- Oil the grill grates and place the chicken skin-side down, cooking undisturbed for 3-4 minutes until grill marks appear. Flip and cook for another 1-2 minutes.
- Reduce the heat to low or move the chicken to indirect heat. Brush with barbecue sauce, cover, and grill for 5 minutes. Flip and continue to brush with sauce every 5 minutes until cooked through (~10 more minutes).
- Serve with additional barbecue sauce if desired.
Notes
Allowing the chicken to marinate longer enhances flavors. Keep an eye on the heat for even cooking and avoid constant flipping for a crispy skin.
