Description

A flavorful Mediterranean dish made with marinated chicken, served in warm pita bread, and topped with tzatziki sauce and fresh veggies.


Ingredients

  • 2 pounds chicken thighs, boneless and skinless
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 3 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup Greek yogurt
  • 1 cucumber, seeded and grated
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon dill, chopped
  • Salt and pepper, to taste
  • 46 pita breads
  • 1 tomato, sliced
  • 1 red onion, thinly sliced
  • Fresh lettuce, chopped

Instructions

  1. Combine olive oil, lemon juice, garlic, oregano, salt, and pepper in a bowl.
  2. Add the chicken thighs and coat well with the marinade. Refrigerate for at least 1 hour, or overnight for best flavor.
  3. Preheat the grill to medium-high heat.
  4. Grill the chicken for 6-7 minutes on each side, or until fully cooked and slightly charred.
  5. Let the chicken rest before slicing thinly.
  6. Combine Greek yogurt, grated cucumber, garlic, olive oil, and dill in a bowl for the tzatziki sauce. Season with salt and pepper to taste, then chill.
  7. Warm the pita breads on the grill or in a pan.
  8. Place some lettuce on each pita, followed by sliced chicken, tomato slices, and red onion.
  9. Drizzle with tzatziki sauce, fold the pita over, and serve immediately.

Notes

For best flavor, marinate the chicken overnight. Use fresh ingredients for optimal taste.
