Description

A creamy and comforting side dish featuring layers of sweet potatoes, garlic, and cheese.


Ingredients

  • 4 medium sweet potatoes, thinly sliced
  • 2 cups heavy cream
  • 4 cloves garlic, minced
  • 1 cup grated cheese (e.g., cheddar or Gruyère)
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh thyme or parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Melt the butter in a saucepan over medium heat and add the minced garlic, cooking until fragrant.
  3. Stir in the heavy cream, salt, and pepper; bring to a simmer.
  4. Layer the sweet potato slices in a greased baking dish, pouring some of the cream sauce over each layer.
  5. Add grated cheese between some layers and on top.
  6. Cover with foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 15-20 minutes, or until the sweet potatoes are tender and the top is golden brown.
  8. Garnish with fresh thyme or parsley before serving.

Notes

For a vegan variation, substitute heavy cream with coconut cream and use a vegan cheese alternative. You can also freeze leftovers for up to a month.
