- 4 medium sweet potatoes, thinly sliced
- 2 cups heavy cream
- 4 cloves garlic, minced
- 1 cup grated cheese (e.g., cheddar or Gruyère)
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh thyme or parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Melt the butter in a saucepan over medium heat and add the minced garlic, cooking until fragrant.
- Stir in the heavy cream, salt, and pepper; bring to a simmer.
- Layer the sweet potato slices in a greased baking dish, pouring some of the cream sauce over each layer.
- Add grated cheese between some layers and on top.
- Cover with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the sweet potatoes are tender and the top is golden brown.
- Garnish with fresh thyme or parsley before serving.
Notes
For a vegan variation, substitute heavy cream with coconut cream and use a vegan cheese alternative. You can also freeze leftovers for up to a month.
