Ingredients

  • 1 pound Large shrimp (peeled and deveined)
  • 4 tablespoons Butter (for sautéing)
  • 4 cloves Garlic (finely minced)
  • 1 cup Heavy cream
  • 1 cup Grated Parmesan cheese (freshly grated)

  • 8 ounces Fettuccine or linguine (wide noodles)
  • 1 tablespoon Fresh parsley (chopped)

Instructions

  1. Bring a large pot of salted water to a rolling boil and cook the fettuccine until just shy of al dente, about 9 minutes; reserve 1 cup pasta water before draining.
  2. While pasta cooks, pat shrimp dry and season lightly with salt and black pepper; heat a large skillet over medium-high heat.
  3. Add butter to the skillet and melt until foaming, then sauté shrimp 1 to 2 minutes per side until pink and just cooked through; transfer shrimp to a plate.
  4. Lower heat to medium and add minced garlic to the skillet, stirring until fragrant, about 30 seconds to 1 minute.
  5. Pour in heavy cream and bring to a gentle simmer, scraping up any browned bits from the pan; let the cream reduce slightly for 2 to 3 minutes.
  6. Whisk in grated Parmesan a handful at a time until fully melted and smooth; if the sauce seems too thick, add reserved pasta water a little at a time to loosen.
  7. Return the cooked shrimp to the skillet, add drained pasta, and toss to coat over low heat until everything is warmed through; adjust seasoning with salt and black pepper.
  8. Finish with chopped parsley and a sprinkle of red pepper flakes if using; serve immediately.
