- 4 pieces boneless, skinless chicken breasts (about 6 ounces each)
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs (preferably panko)
- 4 cloves garlic (minced)
- 1/4 cup fresh parsley (chopped)
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup all-purpose flour
- 2 large eggs (beaten)
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch.
- In a bowl, combine Parmesan cheese, breadcrumbs, minced garlic, chopped parsley, Italian seasoning, salt, and black pepper. Mix well until evenly combined.
- Set up a breading station with flour in one dish, beaten eggs in another, and breadcrumb mixture in a third dish.
- Dredge chicken in flour, dip into eggs, then coat with breadcrumb mixture.
- Heat olive oil in a skillet over medium heat. Add breaded chicken and cook for 2-3 minutes on each side until golden brown.
- Transfer to the baking sheet and bake for 15-20 minutes until the internal temperature reaches 165°F (75°C).
- Let rest for 5 minutes before slicing and serving.
Notes
For a gluten-free version, substitute gluten-free breadcrumbs and flour.
