Description

A refreshing and crunchy salad made with sweet corn, black beans, and zesty dressing, topped with Fritos for the perfect crunch.

Ingredients

Scale
  • 2 (15-ounce) cans sweet corn, drained
  • 1 (15-ounce) can black beans, drained
  • 1 (10-ounce) can Rotel, drained
  • 1 bell pepper, diced (red, green, or yellow)
  • 1 cup shredded cheddar cheese
  • 1 (9.25-ounce) bag Fritos
  • ⅔ cup sour cream
  • 1 Tablespoon extra virgin olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon ground cumin

Instructions

  1. Combine all the ingredients for the dressing in a small bowl: sour cream, olive oil, salt, black pepper, garlic powder, onion powder, and ground cumin. Whisk until smooth and fully incorporated.
  2. Mix in a large bowl: drained corn, black beans, Rotel, diced bell pepper, and shredded cheese.
  3. Top the salad with the homemade dressing and gently stir to combine the salad and dressing mixture.
  4. Add the Fritos to the salad just before serving, folding them in carefully to keep their crunchy texture intact.

Notes

For a creamier texture without sour cream, consider using yogurt or a plant-based alternative. Add fresh herbs or diced avocado for extra flavor.
