Description
Delicious strawberry bars with an oat-kissed shortbread base, perfect for summer gatherings.
Ingredients

- 125 g unsalted butter, melted
- 1½ cups plain flour (225 g)
- 1½ cups rolled oats (135 g)
- ½ cup brown sugar
- ½ tsp baking powder
- Pinch of salt
- 1 egg
- 2/3 cup strawberry jam
- 2 cups chopped strawberries (about 375 g)
- 2 tbsp white sugar
- 2 tsp cornflour
Instructions
- Preheat oven to 180C/350F.
- Spray a 20cm square tin with oil and line with baking paper.
- Mix flour, oats, sugar, baking powder and salt.
- Add butter and egg then mix until crumbly.
- Set aside 1 cup mixture for topping.
- Press remaining mixture into the tin base.
- Mix strawberries, sugar, and cornflour in a bowl.
- Spread jam over base, scatter strawberries, and crumble remaining mixture on top.
- Bake for 35-40 minutes until golden.
- Cool for 10 minutes, then lift out and cut into squares.
Notes
Serve at room temperature; can be stored in an airtight container for up to 5 days.
