Ingredients

- 8 ounces pasta (such as rotini or farfalle)
- 1 cup cherry tomatoes, halved
- 1 cup bell pepper, diced
- 1/2 cup red onion, diced
- 1/2 cup shredded cheese (optional)
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and let cool.
- Combine the cooked pasta, broccoli, cherry tomatoes, bell pepper, and red onion in a large bowl.
- Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.
- Pour the dressing over the pasta and vegetable mixture and toss until well combined.
- If desired, add shredded cheese and mix gently.
- Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld. Serve chilled.
Notes
For added crunch, include toasted nuts or seeds just before serving. Adjust the lemon juice for desired tanginess.
