- 1½ lb chicken breasts
- 1 tbsp olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 can diced tomatoes
- 1 can green chilies
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp salt
- ¼ tsp pepper
- ½ tsp oregano
- 1 tbsp lime juice
- ½ cup chicken broth
Instructions
- Add olive oil, onion, and garlic to the crockpot.
- Place chicken on top and season with chili powder, cumin, paprika, salt, pepper, and oregano.
- Pour in diced tomatoes, green chilies, and chicken broth.
- Cover and cook on low for 360 minutes or high for 240 minutes until tender.
- Shred chicken right in the crockpot and stir in lime juice.
- Simmer for an additional 15 minutes, then serve with your favorite healthy toppings.
