Description

Juicy turkey patties infused with feta and fresh spinach, perfect for summer cookouts.


Ingredients

  • 1 lb. ground turkey (93/7)
  • 2 tsp. olive oil or avocado oil
  • 3 big handfuls spinach, roughly chopped (~ 3 oz)
  • 3 garlic cloves, minced
  • ⅓ cup feta cheese, crumbled (~ 22 ½ oz.) (omit for dairy-free)
  • 1 ½ tsp. dried Italian seasoning
  • ½ tsp. sea salt
  • ¼ tsp. pepper
  • ¼ tsp. crushed red pepper flakes
  • ½ cup grated English cucumber, squeezed to remove water
  • ½ cup plain Greek yogurt
  • 2 cloves garlic, minced
  • 1 ½ Tbsp. lemon juice
  • 1 Tbsp. olive oil or avocado oil
  • 1 Tbsp. fresh dill (or 1 tsp. dried)
  • ¼ tsp. salt
  • ¼ tsp. black pepper

Instructions

  1. Preheat the grill to 425ºF-450ºF. Alternatively, you can use a grill pan sprayed with non-stick cooking spray over medium-high heat on the stove.
  2. Add the oil to a pan over medium heat, then stir in the roughly chopped spinach and garlic. Cook until the spinach wilts, then remove from heat and let cool slightly before mixing.
  3. Combine all the ingredients in a large bowl and mix thoroughly, being careful not to overwork the mixture.
  4. Form the mixture into 4-5 large patties, about 6 oz. each for 4 patties or 4.8 oz. if making 5 patties.
  5. Press extra crumbles of feta cheese into the center of the patties for added flavor.
  6. Grill the patties for 10 minutes on one side, then flip and grill for an additional 6-8 minutes until cooked through, reaching an internal temperature of 160ºF.
  7. Serve the burgers between a bun, wrapped in a lettuce leaf, or over greens with your choice of fixings like pickled onions, tomatoes, and tzatziki sauce.
  8. To create tzatziki sauce, combine Greek yogurt, minced garlic, lemon juice, olive oil, dill, salt, and pepper in a small bowl. Mix well, cover, and refrigerate until serving.

Notes

Patty resting time after grilling helps keep them juicy. Customize toppings as desired for extra flavor.
