Description

Bright, buttery green beans infused with garlic and lemon, perfect as a quick and simple side dish.


Ingredients

  • 1 pound fresh green beans
  • 1 teaspoon salt
  • 3 tablespoons unsalted butter
  • 3 cloves fresh garlic, minced
  • 1 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons Parmesan cheese

Instructions

  1. Blanch the green beans in a pot of boiling salted water for 2 to 3 minutes until they turn bright green and are just tender. Plunge them into an ice bath to stop the cooking.
  2. In a large skillet over medium heat, melt the butter until it foams, then add the minced garlic and cook for about 30 to 60 seconds until fragrant.
  3. Add the drained beans to the skillet and toss to coat in the garlic butter. Season with salt, black pepper, and lemon juice.
  4. Finish with a sprinkle of Parmesan cheese and serve immediately.

Notes

For a vegan version, swap butter with olive oil and Parmesan with nutritional yeast.
