Description
Delicious raspberry jam bars with a chewy, buttery oat base perfect for any occasion.
Ingredients

- 125g unsalted butter, melted
- 1/2 cup brown sugar, tightly packed
- 1 large egg
- 1 1/2 cups all-purpose flour
- 1 1/2 cups rolled oats
- 1/2 tsp baking powder
- Pinch of salt
- 1 cup raspberry jam
Instructions
- Preheat oven to 200°C/400°F (180°C fan). Grease a 20cm/8″ metal pan with butter then line with baking paper with overhang.
- Melt butter in a microwave-proof bowl. Mix in sugar until lump-free. Add egg and mix until incorporated.
- Add flour, oats, baking powder, and salt; mix until you can no longer see flour.
- Spread 1 1/2 cups of the mixture in the prepared pan and press in with your hands.
- Spread with jam, then crumble the remaining mixture over the top.
- Bake for 30-35 minutes or until deep golden.
- Remove and allow to cool in the pan for ~2 hours.
- Cut into 16 squares and enjoy!
Notes
For a dairy-free version, use vegan butter and a flax egg. Ensure to cool completely before cutting for cleaner edges.
