Description

Delicious raspberry jam bars with a chewy, buttery oat base perfect for any occasion.


Ingredients

Scale
  • 125g unsalted butter, melted
  • 1/2 cup brown sugar, tightly packed
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups rolled oats
  • 1/2 tsp baking powder
  • Pinch of salt
  • 1 cup raspberry jam

Instructions

  1. Preheat oven to 200°C/400°F (180°C fan). Grease a 20cm/8″ metal pan with butter then line with baking paper with overhang.
  2. Melt butter in a microwave-proof bowl. Mix in sugar until lump-free. Add egg and mix until incorporated.
  3. Add flour, oats, baking powder, and salt; mix until you can no longer see flour.
  4. Spread 1 1/2 cups of the mixture in the prepared pan and press in with your hands.
  5. Spread with jam, then crumble the remaining mixture over the top.
  6. Bake for 30-35 minutes or until deep golden.
  7. Remove and allow to cool in the pan for ~2 hours.
  8. Cut into 16 squares and enjoy!

Notes

For a dairy-free version, use vegan butter and a flax egg. Ensure to cool completely before cutting for cleaner edges.
