- 2 cucumbers
- 4 tomatoes
- 1/2 red onion
- 1 lemon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1/4 cup dill
Instructions
- Rinse the cucumbers and slice them into thin rounds.
- Rinse the tomatoes and cut them into bite-sized wedges or chunks.
- Peel and thinly slice the red onion.
- Rinse the dill and finely chop the fronds.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper until well combined.
- In a large bowl, combine the sliced cucumbers, tomato wedges, sliced red onion, and chopped dill. Pour the dressing over the vegetables and toss gently to coat evenly.
- Serve the cucumber and tomato salad immediately, or chill in the refrigerator for 15-30 minutes to allow the flavors to meld before serving.
