Description

A refreshing cucumber and tomato salad that perfectly captures the essence of summer with vibrant flavors and simple ingredients.


Ingredients

  • 2 cucumbers
  • 4 tomatoes
  • 1/2 red onion
  • 1 lemon
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/4 cup dill

Instructions

  1. Rinse the cucumbers and slice them into thin rounds.
  2. Rinse the tomatoes and cut them into bite-sized wedges or chunks.
  3. Peel and thinly slice the red onion.
  4. Rinse the dill and finely chop the fronds.
  5. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper until well combined.
  6. In a large bowl, combine the sliced cucumbers, tomato wedges, sliced red onion, and chopped dill. Pour the dressing over the vegetables and toss gently to coat evenly.
  7. Serve the cucumber and tomato salad immediately, or chill in the refrigerator for 15-30 minutes to allow the flavors to meld before serving.
