Description

A refreshing summer salad featuring crisp cucumbers and juicy tomatoes, dressed with homemade Italian dressing.


Ingredients

Scale
  • 2 1/2 cups seeded and diced tomatoes (about 3 medium)
  • 1 1/4 cup peeled, seeded, and sliced cucumber (1 large)
  • 1/3 cup homemade Italian dressing

Instructions

  1. Cut and seed the tomatoes. Then, dice the tomatoes into large “bite-size” pieces about 1/2 inch.
  2. Cut the cucumber in half lengthwise. Use a spoon to scrape out the seeds, then cut the two cucumber halves in half lengthwise again.
  3. Slice the cucumber halves crosswise into about 1/4 to 1/2 inch slices.
  4. Combine the veggies in a large mixing bowl and add the Italian dressing. Stir well to ensure the dressing covers all the vegetables fully.
  5. Serve this immediately, but letting it rest in the fridge for at least half an hour can enhance the flavors.

This salad can be stored in an airtight container in the refrigerator for up to 5 days.
