  • ½ cup apple cider vinegar
  • ½ cup water
  • 1 tablespoon sugar
  • ½ teaspoon salt

Instructions

  1. Thinly slice the red onion and place it in a bowl. Add apple cider vinegar, water, sugar, and salt, stirring until the sugar dissolves. Let it sit at room temperature while the chicken cooks.

  5. In a separate bowl, whisk together sour cream or Greek yogurt, fresh lime juice, lime zest, and a pinch of salt to make the lime crema.
  6. Warm the tortillas in a skillet or microwave wrapped in a damp towel.
  7. Assemble tacos by spooning salsa chicken onto the tortillas, drizzling lime crema, and topping with pickled onions and any optional toppings.
