Instructions
- Thinly slice the red onion and place it in a bowl. Add apple cider vinegar, water, sugar, and salt, stirring until the sugar dissolves. Let it sit at room temperature while the chicken cooks.
- Place chicken breasts in the slow cooker. Sprinkle garlic powder, chili powder, cumin, salt, and pepper evenly over the chicken. Pour salsa over the chicken without stirring.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and shreds easily.
- Remove chicken breasts and shred them directly in the slow cooker using two forks, mixing the shredded chicken with the salsa juices.
- In a separate bowl, whisk together sour cream or Greek yogurt, fresh lime juice, lime zest, and a pinch of salt to make the lime crema.
- Warm the tortillas in a skillet or microwave wrapped in a damp towel.
- Assemble tacos by spooning salsa chicken onto the tortillas, drizzling lime crema, and topping with pickled onions and any optional toppings.
- Serve immediately with sides like rice, beans, or salad for a complete meal.
