Description

A flavorful twist on a traditional burrito bowl, combining tender salsa chicken with delicious toppings.


Ingredients

Scale
  • lbs. boneless skinless chicken breasts (or boneless skinless thighs)
  • 1 can (10 oz.) Rotel (or 1 cup other diced tomatoes with green chiles)
  • 1 cup salsa
  • 23 tablespoons taco seasoning
  • 2 cups cooked rice (⅔ cup uncooked rice)
  • 1 can (15 oz.) black beans, drained, cooked and seasoned
  • ½ cup guacamole
  • ½ cup shredded cheese
  • Lettuce
  • Sour cream
  • Diced tomatoes
  • Chopped cilantro
  • Lime wedges

Instructions

  1. Place chicken breasts in the crockpot.
  2. Pour Rotel and salsa over the chicken, then sprinkle taco seasoning over the top.
  3. Cover the crockpot with its lid and cook on High for 180 minutes.
  4. Remove lid and use 2 forks to shred salsa chicken in the crockpot, then stir to mix it with the sauce.
  5. Serve in bowls over cooked rice with black beans, guacamole, cheese, and any additional toppings of your choice.
