Ingredients

  • 2 pounds boneless, skinless chicken breast
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dry minced onions
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon oregano
  • 29 ounces canned diced tomatoes (fire roasted recommended)
  • 4 ounces can of diced green chilies
  • 7 ounces can of chilies chipotle (optional)
  • 15 ounces jar of salsa con queso
  • Diced tomatoes (for topping)
  • Shredded cheese (for topping)
  • Diced onion (for topping)
  • Sour cream (for topping)
  • Avocado (for topping)
  • Guacamole (for topping)
  • Slices of lime (for serving)
  • Hot sauce (for serving)

Instructions

  1. Place the chicken in the crockpot in a single layer.
  2. Combine chili powder, garlic powder, salt, cumin, smoked paprika, dry minced onions, cayenne pepper, and oregano in a small bowl. Stir to combine.
  3. Sprinkle seasoning over the chicken breasts to ensure an even coat.
  4. Add the diced tomatoes (do not drain), green chilies (do not drain), and chilies chipotle to the crockpot.
  5. Cook on high for 4 hours or cook on low for 8 hours.
  6. Remove the chicken and place it in a large bowl to shred.
  7. Drain excess liquid from the crockpot, leaving a few tablespoons for moisture.
  8. Return the shredded chicken to the crockpot and add the salsa con queso, stirring to combine thoroughly.
  9. Cook for an additional 15 to 20 minutes on low.
  10. Serve on taco shells, tortilla chips, or on a bed of lettuce with the toppings of your choice.

Notes

Consider marinating the chicken for deeper flavor. Use fresh garlic if desired. Leftover chicken is great for burritos or salads.
