- 29 ounces canned diced tomatoes (fire roasted recommended)
- 4 ounces can of diced green chilies
- 7 ounces can of chilies chipotle (optional)
- 15 ounces jar of salsa con queso
- Diced tomatoes (for topping)
- Shredded cheese (for topping)
- Diced onion (for topping)
- Sour cream (for topping)
- Avocado (for topping)
- Guacamole (for topping)
- Slices of lime (for serving)
- Hot sauce (for serving)
Instructions
- Place the chicken in the crockpot in a single layer.
- Combine chili powder, garlic powder, salt, cumin, smoked paprika, dry minced onions, cayenne pepper, and oregano in a small bowl. Stir to combine.
- Sprinkle seasoning over the chicken breasts to ensure an even coat.
- Add the diced tomatoes (do not drain), green chilies (do not drain), and chilies chipotle to the crockpot.
- Cook on high for 4 hours or cook on low for 8 hours.
- Remove the chicken and place it in a large bowl to shred.
- Drain excess liquid from the crockpot, leaving a few tablespoons for moisture.
- Return the shredded chicken to the crockpot and add the salsa con queso, stirring to combine thoroughly.
- Cook for an additional 15 to 20 minutes on low.
- Serve on taco shells, tortilla chips, or on a bed of lettuce with the toppings of your choice.
Notes
Consider marinating the chicken for deeper flavor. Use fresh garlic if desired. Leftover chicken is great for burritos or salads.
