- 2 pounds chicken breasts or thighs
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup BBQ sauce
- 1 cup water
- 1 bag of red and white cabbage
- 1/4 red onion, thinly sliced
- 2 tablespoons cilantro, chopped
- 1/4 cup mayonnaise
- 2 tablespoons apple cider vinegar
- Salt & pepper to taste
Instructions
- Place the chicken in the crockpot, sprinkle with salt and pepper, pour in the BBQ sauce and water, and stir it all together. Cook on high for 4 hours until the chicken is tender.
- Combine all the ingredients for the slaw in a medium-sized bowl and stir together until well mixed. Cover with plastic wrap and refrigerate if you’re prepping ahead.
- Heat flour or corn tortillas in a sauté pan on medium heat until lightly browned on each side, enhancing their flavor.
