Description

Ingredients

  • 2 pounds chicken breasts or thighs
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup BBQ sauce
  • 1 cup water
  • 1 bag of red and white cabbage
  • 1/4 red onion, thinly sliced
  • 2 tablespoons cilantro, chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • Salt & pepper to taste

Instructions

  1. Place the chicken in the crockpot, sprinkle with salt and pepper, pour in the BBQ sauce and water, and stir it all together. Cook on high for 4 hours until the chicken is tender.
  2. Combine all the ingredients for the slaw in a medium-sized bowl and stir together until well mixed. Cover with plastic wrap and refrigerate if you’re prepping ahead.
  3. Heat flour or corn tortillas in a sauté pan on medium heat until lightly browned on each side, enhancing their flavor.
  4. Shred the chicken using two forks or tongs directly in the crockpot, allowing it to soak up all the delicious BBQ sauce.
