- 4 boneless, skinless chicken breasts
- 1 pound baby potatoes, halved
- 1/4 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chicken broth
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Combine the grated Parmesan cheese, minced garlic, Italian seasoning, salt, and black pepper in a large bowl.
- Rub each chicken breast thoroughly with olive oil; then pat the cheese and garlic mixture onto each piece.
- Place the halved baby potatoes at the bottom of your crock pot.
- Arrange the coated chicken breasts on top of the potatoes.
- Pour the chicken broth around the chicken and potatoes.
- Cover the crock pot and cook on low for 6-7 hours or on high for 3-4 hours.
- Garnish with fresh chopped parsley before serving.
