Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 pound baby potatoes, halved
  • 1/4 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chicken broth
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Combine the grated Parmesan cheese, minced garlic, Italian seasoning, salt, and black pepper in a large bowl.
  2. Rub each chicken breast thoroughly with olive oil; then pat the cheese and garlic mixture onto each piece.
  3. Place the halved baby potatoes at the bottom of your crock pot.
  4. Arrange the coated chicken breasts on top of the potatoes.
  5. Pour the chicken broth around the chicken and potatoes.
  6. Cover the crock pot and cook on low for 6-7 hours or on high for 3-4 hours.
  7. Garnish with fresh chopped parsley before serving.
