Description

Flavorful sliders filled with zesty enchilada chicken for a delightful meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 can (10 oz) red enchilada sauce
  • 1 cup creamy ranch dressing
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Slider buns
  • Optional toppings: avocado, cilantro, sliced jalapeƱos

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Pour the red enchilada sauce and ranch dressing over the chicken.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and shreds easily.
  4. Shred the chicken with two forks and stir to combine with the sauce.
  5. Serve the shredded chicken on slider buns and add optional toppings as desired.

Notes

For a spicier version, add chopped green chiles to the enchilada sauce.
