- 1/4 cup cornflour / cornstarch
- 1/2 tsp baking powder
- 1/2 tsp garlic powder
- 1/2 tsp cooking salt (kosher salt)
- 1/4 tsp black pepper
- 1 large egg (~55g/2 oz)
- 2 tbsp milk (any type)
- 2 cups frozen peas
- 1 cup shredded cheese (cheddar, tasty, colby)
- 3/4 cup finely sliced green onion
- 1/4 cup olive oil (for cooking)
- 1/2 cup plain yogurt
- 2 tsp lemon juice
- 2 tsp extra virgin olive oil
- 1/8 tsp finely grated garlic (optional)
- Pinch each salt and pepper
Instructions
- Whisk together the flour, cornflour, baking powder, garlic powder, cooking salt, and black pepper in a medium bowl.
- Crack in the egg and add the milk; whisk until a thick batter forms, adjusting with water if needed.
- Fold in the frozen peas, shredded cheese, and green onion until well distributed.
- Heat olive oil in a nonstick skillet over medium heat until shimmering.
- Spoon batter into small rounds in the pan and cook for 2-3 minutes per side until golden and crisp.
- Transfer to a paper towel-lined plate to drain and season with salt.
- Mix yogurt, lemon juice, extra virgin olive oil, grated garlic, and seasoning to make the dip.
Notes
Serve fritters warm with yogurt dip. Best enjoyed fresh, but leftovers can be reheated in the oven or air fryer for crispness.
