Description

A velvety sauce studded with blistered tomatoes and garlic, this Creamy Tomato Pasta is a comforting dish that feels like home.


Ingredients

Scale
  • 8 ounces of pasta
  • 2 cups of blistered cherry tomatoes
  • 1 cup of heavy cream
  • 2 cloves of fresh garlic, minced
  • 1/2 cup of grated parmesan cheese
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil over medium heat in a large skillet and add the blistered cherry tomatoes. Cook until they start to burst, about 5-7 minutes.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Pour in the heavy cream, stirring to combine.
  5. Mix in the cooked pasta and grated parmesan cheese.
  6. Season with salt and pepper to taste, and cook for an additional 2-3 minutes until heated through.
  7. Serve hot and enjoy!

Notes

Reserve a little pasta water before draining to loosen the sauce if it thickens too much. Add grated parmesan off heat for a glossy finish.
