Description

Indulge in creamy spinach ricotta stuffed shells, a perfect comfort food that combines rich cheese and fresh spinach for a delightful culinary experience.


Ingredients

  • 15 oz Ricotta cheese (whole-milk preferred)
  • 5 oz Fresh spinach (wilted and squeezed dry)
  • 1/2 cup Parmesan cheese (freshly grated)
  • 1 large Egg
  • 2 cloves Garlic (minced)
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 12 oz Jumbo pasta shells (cooked al dente)
  • 2 cups Marinara sauce
  • 1 cup Mozzarella cheese (for topping)
  • 1 tbsp Fresh basil or parsley (for garnish)
  • 1/4 tsp Red pepper flakes

Instructions

  1. Combine ricotta cheese, Parmesan cheese, egg, minced garlic, wilted spinach, salt, and pepper in a mixing bowl until smooth.
  2. Cook jumbo pasta shells in salted boiling water until al dente, then drain and cool.
  3. Spread a layer of marinara sauce in the bottom of a baking dish.
  4. Stuff each pasta shell with the ricotta mixture and arrange in the baking dish, seam side up.
  5. Pour remaining marinara sauce over the shells and sprinkle mozzarella and red pepper flakes on top.
  6. Cover with foil and bake at 375°F (190°C) for 20 minutes, then remove foil and bake for an additional 10-12 minutes until bubbly and golden.
  7. Allow to rest for 5-10 minutes before serving.

Notes

Letting the dish rest before serving helps meld the flavors together.
