- 15 oz Ricotta cheese (whole-milk preferred)
- 5 oz Fresh spinach (wilted and squeezed dry)
- 1/2 cup Parmesan cheese (freshly grated)
- 1 large Egg
- 2 cloves Garlic (minced)
- 1 tsp Salt
- 1/2 tsp Pepper
- 12 oz Jumbo pasta shells (cooked al dente)
- 2 cups Marinara sauce
- 1 cup Mozzarella cheese (for topping)
- 1 tbsp Fresh basil or parsley (for garnish)
- 1/4 tsp Red pepper flakes
Instructions
- Combine ricotta cheese, Parmesan cheese, egg, minced garlic, wilted spinach, salt, and pepper in a mixing bowl until smooth.
- Cook jumbo pasta shells in salted boiling water until al dente, then drain and cool.
- Spread a layer of marinara sauce in the bottom of a baking dish.
- Stuff each pasta shell with the ricotta mixture and arrange in the baking dish, seam side up.
- Pour remaining marinara sauce over the shells and sprinkle mozzarella and red pepper flakes on top.
- Cover with foil and bake at 375°F (190°C) for 20 minutes, then remove foil and bake for an additional 10-12 minutes until bubbly and golden.
- Allow to rest for 5-10 minutes before serving.
Notes
