Description

A delightful and creamy red potato salad, perfect for picnics and gatherings, featuring tender potatoes and a blend of mayonnaise, dill, and apple cider vinegar.

Ingredients

Scale
  • 2 pounds red potatoes
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1/2 cup diced celery
  • 1/4 cup diced red onion
  • 1/2 cup chopped fresh dill
  • Salt and pepper to taste

Instructions

  1. Wash the red potatoes and cut them into bite-sized pieces. Place them in a pot of salted water and bring to a boil. Cook until tender, about 10-15 minutes. Drain and let cool.
  2. In a large bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper. Whisk until smooth.
  3. Add the cooled potatoes, diced celery, diced red onion, and chopped dill to the bowl. Gently mix until all the potatoes are coated in the dressing.
  4. Taste and adjust seasoning if necessary. Chill in the refrigerator for at least an hour before serving to let the flavors meld together.
  5. Serve cold at your next gathering and enjoy!

Notes

Chill the salad for at least an hour before serving to enhance flavor. You can make it a day ahead for optimal taste.
