- 1 cup mayonnaise

Instructions
- Wash the red potatoes and cut them into bite-sized pieces. Place them in a pot of salted water and bring to a boil. Cook until tender, about 10-15 minutes. Drain and let cool.
- In a large bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper. Whisk until smooth.
- Add the cooled potatoes, diced celery, diced red onion, and chopped dill to the bowl. Gently mix until all the potatoes are coated in the dressing.
- Taste and adjust seasoning if necessary. Chill in the refrigerator for at least an hour before serving to let the flavors meld together.
