- 3 cups penne pasta, uncooked
- 2 tbsp KRAFT Lite Zesty Italian Dressing
- 1–1/2 lb boneless skinless chicken breasts, cut into bite-size pieces
- 2 zucchini, cut into bite-size pieces
- 1–1/2 cups cut-up fresh asparagus spears (1-inch lengths)
- 1 red pepper, chopped
- 1 cup fat-free reduced-sodium chicken broth
- 4 oz PHILADELPHIA Neufchatel Cheese, cubed
- 1/4 cup Grated Parmesan Cheese
Instructions
- Cook pasta in a large saucepan according to package instructions, omitting salt.
- Heat the KRAFT Lite Zesty Italian Dressing in a large skillet over medium heat.
- Add the bite-sized chicken pieces to the skillet and cook for 10 to 12 minutes, stirring frequently.
- Toss in the zucchini, asparagus, and red pepper, and continue cooking for another 5 minutes.
- Pour in the chicken broth and add the Neufchatel cheese, cooking for 1 minute until the cheese melts.
- Stir in the Parmesan cheese and allow it to melt into the mixture.
- Drain the pasta and return it to the pan, mixing in the chicken and vegetable mixture.
- Cook for another minute until heated through.
Notes
For a vegetarian version, replace chicken with tofu or lentils and use vegetable broth.
