- 1 cup black beans, drained and rinsed

- 1 packet taco seasoning
- Salt and pepper to taste

Instructions
- In a large skillet, heat a bit of oil over medium heat. Add diced chicken and cook until browned.
- Stir in taco seasoning, then add rice, chicken broth, black beans, and corn.
- Bring to a boil, then reduce heat, cover, and let simmer until the rice is cooked, typically around 18-20 minutes.
