Description

A flavorful and easy one pan chicken burrito bowl, bursting with creamy textures and zesty spices, perfect for family dinners.

Ingredients

Scale
  • 1 lb chicken breast, diced
  • 1 cup rice
  • 2 cups chicken broth
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup cream or sour cream
  • 1 packet taco seasoning
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. In a large skillet, heat a bit of oil over medium heat. Add diced chicken and cook until browned.
  2. Stir in taco seasoning, then add rice, chicken broth, black beans, and corn.
  3. Bring to a boil, then reduce heat, cover, and let simmer until the rice is cooked, typically around 18-20 minutes.
  4. Stir in cream or sour cream and shredded cheese until melted and combined.
  5. Season with salt and pepper to taste. Garnish with chopped cilantro before serving.

Notes

For a vegan option, replace chicken with hearty mushrooms and use coconut cream instead of dairy.
