- 3 lbs new potatoes
- 4 cups heavy cream
- 1 cup onion (finely chopped)
- 1/4 cup butter
- 1/4 – 1/2 cup fresh dill, chopped (just the feathered ends, not the stems)
- 1/2 – 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/8 teaspoon nutmeg
Instructions
- Melt the butter in a large skillet over medium heat. Add the chopped onions and sauté until translucent, approximately 5 minutes.
- Pour in the heavy cream, stirring well. Allow it to simmer gently for about 10 minutes, allowing it to thicken slightly.
- Stir in the freshly chopped dill, salt, pepper, and nutmeg. Adjust seasoning to taste, and set aside.
- Wash and scrub the new potatoes to remove any dirt. Depending on their size, you can either leave them whole or halve them for quicker cooking.
- Bring a large pot of salted water to a boil and add the potatoes. Cook until fork-tender, roughly 15-20 minutes.
- Drain the potatoes and return them to the pot. Pour the creamy dill sauce over the potatoes and gently mix until well-coated.
Notes
Let the dish sit for a few minutes before serving to allow the flavors to meld beautifully. Store leftovers in an airtight container in the fridge for 3-4 days.
