Description

Comforting creamy dill potatoes that blend rich textures with fresh herbs for a delightful side or main dish.


Ingredients

  • 3 lbs new potatoes
  • 4 cups heavy cream
  • 1 cup onion (finely chopped)
  • 1/4 cup butter
  • 1/41/2 cup fresh dill, chopped (just the feathered ends, not the stems)
  • 1/21 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/8 teaspoon nutmeg

Instructions

  1. Melt the butter in a large skillet over medium heat. Add the chopped onions and sauté until translucent, approximately 5 minutes.
  2. Pour in the heavy cream, stirring well. Allow it to simmer gently for about 10 minutes, allowing it to thicken slightly.
  3. Stir in the freshly chopped dill, salt, pepper, and nutmeg. Adjust seasoning to taste, and set aside.
  4. Wash and scrub the new potatoes to remove any dirt. Depending on their size, you can either leave them whole or halve them for quicker cooking.
  5. Bring a large pot of salted water to a boil and add the potatoes. Cook until fork-tender, roughly 15-20 minutes.
  6. Drain the potatoes and return them to the pot. Pour the creamy dill sauce over the potatoes and gently mix until well-coated.

Notes

Let the dish sit for a few minutes before serving to allow the flavors to meld beautifully. Store leftovers in an airtight container in the fridge for 3-4 days.
