A refreshing summer delight that combines the crispness of cucumbers with a creamy dressing.
Ingredients
Scale
- 1 cucumber (thinly sliced)
- 2 shallots (thinly sliced)
- 2 cloves garlic (minced)
- 2 tablespoons Greek yoghurt (vegan option available)
- 1.5 tablespoons mayonnaise (vegan option available)
- 1 handful fresh dill (chopped)
- 1 lemon (juiced)
- 1 pinch salt
- 1/2 teaspoon sugar
Instructions
- Slice the cucumber thinly into a large lidded jar or tub.
- Add the shallots, garlic, Greek yoghurt, mayonnaise, fresh dill, lemon juice, salt, and sugar to the jar with the cucumber.
- Put the lid on and shake the jar or tub well until the cucumber slices are coated in the creamy sauce.
- Enjoy straight away or chill in the refrigerator before serving.
Notes
For best results, allow the salad to rest for about 30 minutes before serving to enhance flavors.
