Description

A refreshing summer delight that combines the crispness of cucumbers with a creamy dressing.


Ingredients

Scale
  • 1 cucumber (thinly sliced)
  • 2 shallots (thinly sliced)
  • 2 cloves garlic (minced)
  • 2 tablespoons Greek yoghurt (vegan option available)
  • 1.5 tablespoons mayonnaise (vegan option available)
  • 1 handful fresh dill (chopped)
  • 1 lemon (juiced)
  • 1 pinch salt
  • 1/2 teaspoon sugar

Instructions

  1. Slice the cucumber thinly into a large lidded jar or tub.
  2. Add the shallots, garlic, Greek yoghurt, mayonnaise, fresh dill, lemon juice, salt, and sugar to the jar with the cucumber.
  3. Put the lid on and shake the jar or tub well until the cucumber slices are coated in the creamy sauce.
  4. Enjoy straight away or chill in the refrigerator before serving.

Notes

For best results, allow the salad to rest for about 30 minutes before serving to enhance flavors.
