Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680 g)
  • 8 oz white mushrooms, sliced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 ½ cups low-sodium chicken broth
  • 1 cup full-fat sour cream or Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons all-purpose flour or cornstarch/arrowroot powder for gluten-free
  • 2 tablespoons butter
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Pat dry the chicken breasts. Next, dice the onion, slice the mushrooms, and mince the garlic.
  2. Optional – In a small skillet over medium heat, melt the butter. Sauté the onions and mushrooms for 5-7 minutes, then add the garlic and cook for an additional minute.
  3. Place the chicken breasts in the crockpot, pour in the chicken broth, and add the sautéed mushrooms and onions.
  4. Stir in the Dijon mustard, Worcestershire sauce, salt, and pepper to taste.
  5. Cover and cook on low for 4-6 hours or on high for 2-3 hours, avoiding lifting the lid while cooking.
  6. About 30 minutes before serving, remove the chicken breasts. Make a slurry with the flour and a bit of cold water, then stir it into the crockpot.
  7. Shred the chicken using two forks, return it to the crockpot, and cook uncovered on high for 20-30 minutes.
  8. Stir in the sour cream off the heat, adjust the seasoning, and if desired, garnish with parsley.
  9. Serve over egg noodles, rice, or fluffy mashed potatoes, enjoying every creamy bite!

Notes

For a tangy twist, you can substitute sour cream with Greek yogurt. The recipe is also adaptable for gluten-free diets by using cornstarch or gluten-free flour.
