Ingredients

- 1 cup red lentils (uncooked & washed)
- 1 medium onion (chopped)
- 2 medium carrots (chopped)
- 1 medium celery stalk (diced)
- 1 tsp turmeric powder
- 1/2 tsp ground cumin
- 1/2 tsp salt
- 1/2 tsp black pepper
- 4 cups water
- 1/2 lemon (juiced)
- 2 tbsp olive oil
- 1 tbsp fresh parsley (chopped)
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until slightly translucent, about 3-4 minutes.
- Toss in the chopped carrots and celery. Cook for 1-2 minutes, stirring occasionally, until they begin to soften.
- Add the washed red lentils and stir to combine for another minute.
- Pour in 4 cups of water, turmeric, cumin, salt, and pepper. Stir well to incorporate all ingredients.
- Cover the pot and bring to a boil over high heat, then reduce to low and simmer for 30-45 minutes, or until lentils are tender.
- Remove from heat, squeeze in lemon juice, and serve hot garnished with fresh parsley.
Notes
Allowing the soup to simmer adequately melds the flavors beautifully. If you prefer a creamier texture, consider using an immersion blender to puree part of the soup.
