Ingredients

- 2 cups cooked chicken, shredded
- 1 cup bell peppers, diced
- 1 cup cucumbers, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup tangy olives, sliced
- 1/4 cup fresh basil, chopped
- 1/2 cup Parmesan cheese, grated
- 2 cups pasta (cooked and cooled)
- 1/4 cup olive oil
- 1/2 cup mayonnaise
- 2 tablespoons lemon juice
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Combine the cooked pasta, chicken, fresh veggies, olives, basil, and Parmesan cheese in a large bowl.
- Whisk together the olive oil, mayonnaise, lemon juice, salt, and pepper in a separate small bowl to create the dressing.
- Pour the dressing over the pasta mixture and toss to coat evenly.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
