Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup bell peppers, diced
  • 1 cup cucumbers, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup tangy olives, sliced
  • 1/4 cup fresh basil, chopped
  • 1/2 cup Parmesan cheese, grated
  • 2 cups pasta (cooked and cooled)
  • 1/4 cup olive oil
  • 1/2 cup mayonnaise
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Combine the cooked pasta, chicken, fresh veggies, olives, basil, and Parmesan cheese in a large bowl.
  2. Whisk together the olive oil, mayonnaise, lemon juice, salt, and pepper in a separate small bowl to create the dressing.
  3. Pour the dressing over the pasta mixture and toss to coat evenly.
  4. Chill in the refrigerator for at least 30 minutes before serving.
