Description

A vibrant and savory dish combining seasoned chicken with creamy street corn and rice, capturing the essence of Mexican street markets.


Ingredients

  • 2 1/2 cups cooked rice
  • 2 lbs chicken breasts, sliced in half
  • Chili powder, to taste
  • Cumin, to taste
  • Paprika, to taste
  • Garlic powder, to taste
  • Oregano, to taste
  • Salt and pepper, to taste
  • 2 Tablespoons olive oil
  • 2 1/2 cups corn kernels
  • 1/2 of an onion, diced
  • 1 small jalapeno, deveined and seeded, diced (optional)
  • 1/3 cup mayonnaise
  • 1/2 cup Mexican crema or sour cream
  • 2 1/2 teaspoons tajin
  • Juice from 1 small lime
  • 23 Tablespoons milk
  • Pinch fine sea salt
  • 1 ripe avocado, chopped
  • 1/2 cup cotija cheese, shredded
  • 1/2 cup chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions

  1. Mix together mayonnaise, Mexican crema or sour cream, tajin, lime juice, and milk in a bowl until well blended.
  2. Season the chicken breasts generously on both sides with salt, pepper, chili powder, cumin, paprika, garlic powder, and oregano.
  3. Heat olive oil in a skillet over medium heat and add the seasoned chicken, cooking until it reaches 165°F, flipping once.
  4. Remove the chicken and set aside.
  5. Add corn kernels, diced onion, and jalapeno to the same skillet, sauté until charred and tender, about 4-5 minutes.
  6. Stir in half of the prepared sauce to create a creamy street corn mixture.
  7. Assemble by spooning rice into a bowl, topping with chicken and street corn mixture, then garnishing with avocado, cotija cheese, and cilantro.
  8. Serve with lime wedges and extra sauce for added flavor.

Notes

For a spicier dish, add more jalapenos or chili powder. This recipe can be made vegan by substituting chicken with tofu and mayo with cashew cream.
