Description

A cozy chicken stew slow-cooked to perfection with vibrant vegetables and savory flavors, perfect for busy weeknights or family gatherings.


Ingredients

  • 1 lb. boneless skinless chicken thighs
  • 3 cups chicken broth
  • 2 tablespoons tomato paste
  • 1 small yellow onion, peeled and minced
  • 2 large potatoes, diced (preferably russet or Yukon gold)
  • 2 cloves garlic, diced
  • 2 stalks celery, diced
  • 3 medium carrots, sliced
  • 1 cup green beans, sliced
  • 1½ tablespoons dried Italian seasoning
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper

Instructions

  1. Prepare by mincing the garlic and dicing the potatoes, onion, celery, carrots, and slicing the green beans into 1/2 inch pieces.
  2. Add all the ingredients to a 6-quart crock pot. Nestle the chicken thighs into the vegetables and broth mixture.
  3. Cover with the lid and cook for 5-6 hours on Low or 3 hours on High.
  4. Remove the lid, take out the bay leaf, and use two forks to shred the chicken. Return shredded chicken to the stew.
  5. Stir the stew well, taste, and season with additional salt and pepper as desired. Serve warm in bowls.

Notes

For a thicker stew, mash some of the cooked potatoes against the sides of the pot and stir back into the broth.
