Description

Ingredients

  • 8 oz. pasta (penne or rotini)
  • 2 cups cooked chicken, shredded or diced
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (cooked or canned)
  • 1/4 cup cilantro, chopped
  • 1/4 cup ranch dressing
  • 1 tablespoon fajita seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions; drain and rinse under cold water.
  2. In a large bowl, combine the cooked pasta, chicken, bell pepper, onion, cherry tomatoes, corn, and cilantro.
  3. In a separate small bowl, mix the ranch dressing and fajita seasoning together.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. Season with salt and pepper to taste.
  6. Serve immediately or chill in the fridge for an hour before serving.
