- 8 oz. pasta (penne or rotini)
- 2 cups cooked chicken, shredded or diced
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 cup cherry tomatoes, halved
- 1 cup corn (cooked or canned)
- 1/4 cup cilantro, chopped
- 1/4 cup ranch dressing
- 1 tablespoon fajita seasoning
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions; drain and rinse under cold water.
- In a large bowl, combine the cooked pasta, chicken, bell pepper, onion, cherry tomatoes, corn, and cilantro.
- In a separate small bowl, mix the ranch dressing and fajita seasoning together.
- Pour the dressing over the pasta salad and toss to combine.
- Season with salt and pepper to taste.
- Serve immediately or chill in the fridge for an hour before serving.
