Delightful chewy lemon cookies with a crispy outside and soft inside, infused with fresh lemon zest and juice.

- 2 ¼ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 ½ cups granulated sugar
- 2 ounces cream cheese, softened and cut into 8 pieces
- ⅓ cup unsalted butter, melted and warm
- ⅓ cup vegetable oil
- 1 large egg, at room temperature
- 2 tablespoons lemon juice
- 2 tablespoons lemon zest
- 1 ½ teaspoons lemon extract
- 2–3 drops yellow food coloring (optional)
Instructions
- Preheat the oven to 350°F. Line 2 baking sheets with parchment paper; set aside.
- Whisk the flour, baking powder, baking soda, and salt together in a medium bowl.
- Place the sugar and cream cheese in a large bowl. Whisk in the melted butter until smooth (some lumps of cream cheese may remain).
- Incorporate the vegetable oil, then whisk in the egg, lemon juice, lemon zest, lemon extract, and optional food coloring until the mixture is uniform.
- Fold the flour mixture into the wet ingredients until a soft, homogenous dough forms.
- Scoop the dough into approximately 1.5-tablespoon sized balls and place them 2 inches apart on the prepared baking sheets. Using the bottom of a greased measuring cup, press the dough balls until they are about 2 inches in diameter.
- Bake cookies, one sheet at a time, for 11-13 minutes, until the edges are set but the center remains soft.
- Allow the cookies to cool on the pan for about 5 minutes before transferring them to a wire rack to cool completely.
Notes
Store leftover cookies in an airtight container at room temperature for approximately one week. Dough can be refrigerated for up to three days or frozen for up to three months.
