Description

Delicious Halal Chicken Rice Bowls featuring bright lemon flavors, gentle smoke from paprika, and aromatic spices, perfect for family meals and gatherings.


Ingredients

Scale
  • ½ teaspoon ground cardamom
  • ½ teaspoon all spice
  • ½ teaspoon ground cumin
  • ½ teaspoon ground coriander
  • 1 teaspoon hot paprika
  • ½ teaspoon turmeric
  • ½ teaspoon kosher salt
  • 1 ½ pounds boneless skinless chicken thighs or breasts
  • 3 cloves garlic (pressed)
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon sumac
  • ¾ teaspoon kosher salt
  • 1 teaspoon adobo seasoning
  • 2 tablespoons butter
  • 1½ cups basmati rice (rinsed and drained)
  • ¼ cup minced onions
  • 1 serrano or jalapeno (minced)
  • 2¼ cups low sodium chicken broth
  • Toppings: prepared white sauce, tomatoes, cucumbers, lettuce, pita wedges

Instructions

  1. Combine the seasonings in a bowl and set aside one teaspoon for the rice.
  2. Add the chicken to a large bowl, toss with seasoning blend, garlic, lemon juice, olive oil, oregano, sumac, and salt. Marinate for 20-60 minutes.
  3. Heat a saute pan over medium heat, add chicken, and cook for 6-12 minutes until the internal temperature is 165ºF. Remove and keep warm.
  4. Rinse the rice in a sieve under cold water until clear. In the same pan, melt butter, add rice, onions, and peppers, saute for 2 minutes. Season and add chicken broth, bring to a boil, cover, turn heat to low, and cook for 15 minutes.
  5. Let the rice sit for 5 minutes before fluffing. Serve in bowls topped with chicken and desired veggies.

Notes

Tip: Use a thermometer to ensure chicken is fully cooked without drying out.
