Description

A fresh and flavorful salad combining juicy chicken, creamy mozzarella, and the vibrant taste of basil, perfect for any occasion.


Ingredients

Scale
  • 1 lb. boneless, skinless chicken breasts
  • 2 Tbsp. olive oil
  • 2 Tbsp. balsamic vinegar
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • About 8 cups mixed lettuce (romaine, spinach, arugula)
  • About 2 cups halved cherry tomatoes
  • 8 oz. bocconcini or fresh mozzarella, cubed
  • About 1/2 cup basil leaves
  • 2 Tbsp. balsamic glaze
  • 1 Tbsp. lemon juice
  • Fresh cracked pepper, to taste

Instructions

  1. To make the chicken, marinate all ingredients for at least 30 minutes and up to 3 hours.
  2. Preheat the oven to 400°F and bake chicken for about 30 minutes.
  3. Grill on medium-high heat for 10-13 minutes per side until cooked through.
  4. Sauté in a large skillet over medium heat for 12-14 minutes per side.
  5. Once cooked, set chicken aside to rest.
  6. Layer tomatoes, mozzarella, and basil on the lettuce.
  7. Slice the chicken and drizzle with balsamic glaze, olive oil, lemon juice, salt, and pepper. Serve and enjoy!

Notes

For best flavor, marinate chicken for at least an hour. Fresh ingredients are key for awesome flavor.
