A quick and flavorful Cajun-inspired chicken pasta cooked in a single skillet, perfect for busy weeknights.

- 1 pound boneless, skinless chicken breasts, cut into strips
- 1 tablespoon Cajun seasoning
- 2 tablespoons olive oil
- 1 medium onion, diced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 3 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes, undrained
- 2 cups chicken broth
- 1 cup heavy cream
- 8 ounces penne pasta
- Salt and black pepper, to taste
- Fresh parsley, chopped, for garnish
- Grated Parmesan cheese, for serving
Instructions
- Season the chicken strips with Cajun seasoning, making sure they are well-coated.
- In a large skillet over medium-high heat, heat the olive oil. Add the seasoned chicken strips in a single layer and cook until golden brown and cooked through. Remove the chicken and set aside.
- Add the onion and bell peppers to the same skillet. Sauté for about 3 to 4 minutes until the veggies start to soften.
- Add the minced garlic and cook for about 1 minute, or until fragrant.
- Pour the diced tomatoes, chicken broth, and heavy cream into the skillet. Stir to combine.
- Bring the mixture to a simmer, then add the penne pasta. Cover and let it cook for about 15 minutes, or until the pasta is done and has absorbed most of the liquid, stirring occasionally.
- Return the cooked chicken back to the skillet and mix it into the pasta.
- Taste and adjust seasoning with salt and black pepper as needed.
- Serve the pasta garnished with chopped fresh parsley and grated Parmesan cheese.
Notes
For a dairy-free option, substitute heavy cream with full-fat coconut milk.
