- 8 oz pasta (penne or fusilli)
- 1 cup Boursin cheese
- 2 cups fresh spinach
- 1/2 cup sundried tomatoes, chopped
- 1 cup mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- 1 cup heavy cream
- 1 clove garlic, minced
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the pasta according to package instructions; drain and set aside.
- Heat a splash of olive oil in a large skillet over medium heat, add minced garlic and sauté until fragrant.
- Add fresh spinach and sundried tomatoes; cook until spinach is wilted.
- Combine the cooked pasta, Boursin cheese, heavy cream, and the sautéed mixture in a large bowl.
- Season with salt and pepper to taste.
- Transfer to a baking dish and top with mozzarella and Parmesan cheese.
- Bake for 20-25 minutes until the cheese is bubbly and golden.
- Let it cool slightly before serving.
Notes
You can swap out Boursin cheese for other creamy herb cheeses. This dish can also be prepared in advance and stored for convenience.
