Description

Ingredients

  • ⅓ cup all-purpose flour
  • ½ teaspoon cinnamon

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • ¾ teaspoon salt
  • 5 tablespoons unsalted butter, room temperature
  • ¾ cup whole milk
  • ¼ cup buttermilk
  • 1 egg, slightly beaten
  • ½ teaspoon vanilla extract
  • 2 cups fresh blueberries
  • 1 cup powdered sugar
  • 5 teaspoons whole milk (may need more or less)
  • ¼ teaspoon vanilla extract
  • salt, pinch

Instructions

  1. Preheat oven to 375°F. Grease and lightly flour an 8×8 baking dish.
  2. Combine the flour, brown sugar, and cinnamon in a medium bowl to make the streusel.
  3. Cut in the butter until the mixture forms large crumbs. Set aside.
  4. Whisk together flour, baking powder, salt, and sugar in a large bowl.
  5. Add butter to the flour mixture and cut it in using a pastry cutter until crumbly.
  6. Make a well in the center of the bowl and add egg, milk, buttermilk, and vanilla extract.
  7. Stir the ingredients together using a rubber spatula just until combined; the batter will be lumpy and thick.
  8. Fold in blueberries, being careful not to break them open.
  9. Spoon batter into the prepared pan and spread it evenly using an offset spatula.
  10. Sprinkle the streusel topping all over the top.
  11. Bake on the middle rack for 55-60 minutes or until a toothpick inserted into the center comes out clean.
  12. Stir together all glaze ingredients until smooth and silky in a small bowl.
  13. Drizzle the glaze all over the hot streusel topping and let it harden slightly before serving.
  14. Let the cake cool and serve warm or at room temperature.
