Description

Tender, smoky BBQ pulled chicken topped with a refreshing apple jalapeño slaw, perfect for gatherings or a quick midweek dinner.


Ingredients

  • 2 pounds skinless, boneless chicken breasts
  • 1 cup BBQ sauce (smoky, not too sweet)
  • 2 tablespoons apple cider vinegar
  • 3 cups shredded cabbage (green, purple, or mix)
  • 1 large apple, thinly sliced (Granny Smith or Honeycrisp)
  • 1 small jalapeño, finely diced (seeds removed for less heat)
  • ¼ cup mayonnaise (full-fat)
  • 1 tablespoon honey
  • Salt and pepper to taste
  • 12 small corn or flour tortillas (7-inch), warmed before serving

Instructions

  1. Pat the chicken breasts dry and season lightly with salt and pepper. Place them in the slow cooker in a single layer.
  2. Pour the BBQ sauce and apple cider vinegar over the chicken. Stir to coat everything evenly. Cover and cook on low for 6 to 8 hours until the chicken is tender and can be shredded easily.
  3. While the chicken cooks, shred the cabbage and thinly slice the apple. If desired, dice the jalapeño finely, removing the seeds to achieve a milder taste.
  4. In a bowl, mix the mayonnaise, honey, salt, and pepper together. Toss the cabbage, apple, and jalapeño in the dressing until everything is well coated but still crisp.
  5. Once the chicken is cooked, shred it directly in the slow cooker using two forks. Stir the shredded chicken into the sauce to soak up all the delicious flavor.
  6. Warm the tortillas in a dry skillet or in the microwave wrapped in a damp towel. Assemble tacos by piling on pulled chicken and topping with the apple jalapeño slaw.

Notes

For added flavor, consider marinating the chicken overnight in BBQ sauce and apple cider vinegar. Serve with lime wedges and cilantro for a fresh touch.
