A comforting dish featuring juicy barbecued chicken served over fluffy rice with vibrant veggies.
Ingredients

- 1 pound chicken breasts (sliced thinly)
- 1 Tablespoon avocado oil
- 4 cups shredded red cabbage
- 2 cups shredded carrots
- 1 cup diced cucumber
- 1 avocado
- 2 cups cooked rice
- 3 Tablespoons BBQ Seasoning (or store-bought)
- 1 Tablespoon smoked paprika
- 1/2 Tablespoon brown sugar
- 1 teaspoon garlic powder
- 1 teaspoon dried minced onion
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup BBQ Sauce (or store-bought)
- 1 15-ounce can tomato sauce
- 1/4 cup maple syrup
- 1/8 cup apple cider vinegar
- 1 Tablespoon dried minced onion
- 1 Tablespoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Preheat the oven to 400 degrees F.
- Combine BBQ seasoning ingredients in a small bowl and mix well. Sprinkle seasoning on both sides of the chicken breasts.
- In a medium saucepan, combine BBQ sauce ingredients, whisk well, and simmer over low heat while cooking the chicken.
- Heat avocado oil in a large cast iron skillet over medium-high heat and cook chicken for 4 minutes per side, then set aside.
- Add cabbage and carrots to the skillet and toss. Place cooked chicken on top, coating each breast with some BBQ sauce.
- Bake in the oven for 10 minutes, then broil for an additional 5 minutes.
- Remove, cut chicken into bite-sized pieces, and assemble bowls with rice, cabbage, carrots, chicken, cucumbers, and avocado slices, drizzling with remaining BBQ sauce.
Notes
For meal prep, fill containers with rice, BBQ chicken, veggies, and a drizzle of sauce. Reheat in the microwave and add fresh cucumber and avocado when ready to eat.
