- 2 cups cooked, shredded chicken
- 1/2 cup barbecue sauce
- 4 burrito-size flour tortillas
- 2 cups shredded mozzarella cheese
- 1/4 cup thinly sliced red onion
- 2 tablespoons chopped cilantro
- Extra barbecue sauce, for dipping
Instructions
- Heat shredded chicken and barbecue sauce in a small pot over medium heat until warmed through. Set aside.
- Lay one tortilla on a flat surface. Sprinkle 1/4 cup of mozzarella over half of the tortilla.
- Spread 1/4 of the barbecue chicken mixture on top of the cheese.
- Top with red onion, cilantro, and another 1/4 cup of mozzarella. Fold the tortilla over itself to cover all the filling.
- Heat a large skillet over medium heat. Add the quesadilla and cook until the tortilla is golden brown and crispy, a few minutes. Flip and cook until the other side is golden and the cheese is melted.
- Slice and serve with extra barbecue sauce, if desired.
Notes
For an extra crunchy exterior, you can lightly brush the tortillas with olive oil before cooking.
