Description

Savor the delicious combination of tender chicken, tangy barbecue sauce, and gooey cheese wrapped in crispy tortillas.


Ingredients

  • 2 cups cooked, shredded chicken
  • 1/2 cup barbecue sauce
  • 4 burrito-size flour tortillas
  • 2 cups shredded mozzarella cheese
  • 1/4 cup thinly sliced red onion
  • 2 tablespoons chopped cilantro
  • Extra barbecue sauce, for dipping

Instructions

  1. Heat shredded chicken and barbecue sauce in a small pot over medium heat until warmed through. Set aside.
  2. Lay one tortilla on a flat surface. Sprinkle 1/4 cup of mozzarella over half of the tortilla.
  3. Spread 1/4 of the barbecue chicken mixture on top of the cheese.
  4. Top with red onion, cilantro, and another 1/4 cup of mozzarella. Fold the tortilla over itself to cover all the filling.
  5. Heat a large skillet over medium heat. Add the quesadilla and cook until the tortilla is golden brown and crispy, a few minutes. Flip and cook until the other side is golden and the cheese is melted.
  6. Slice and serve with extra barbecue sauce, if desired.

Notes

For an extra crunchy exterior, you can lightly brush the tortillas with olive oil before cooking.
