Description

Easy and delicious BBQ chicken quesadillas that combine savory chicken with tangy BBQ sauce and melted cheese, perfect for any gathering.


Ingredients

  • 2 cups cooked chicken, shredded or diced
  • ½ to ¾ cup BBQ sauce
  • 4 large flour tortillas (about 10-inch diameter)
  • 1 ½ to 2 cups shredded cheese (Monterey Jack and sharp cheddar blend)
  • Red onion (optional, finely diced)
  • Fresh cilantro (optional, chopped)
  • Cooking oil or butter

Instructions

  1. Combine your cooked, shredded, or diced chicken with your chosen BBQ sauce in a medium bowl.
  2. Place a large non-stick skillet or cast-iron pan over medium heat and add a small drizzle of cooking oil or a knob of butter.
  3. Lay one large flour tortilla flat in the heated skillet.
  4. Sprinkle about half a cup of your shredded cheese evenly over the tortilla.
  5. Spoon about half of your BBQ chicken mixture over one half of the cheese-covered tortilla.
  6. Sprinkle a little more cheese over the chicken filling for extra gooeyness.
  7. Fold the empty half of the tortilla over the filling, creating a half-moon shape.
  8. Cook the quesadilla for about 3-5 minutes on the first side, until golden brown and crispy.
  9. Flip the quesadilla and cook for another 3-5 minutes until golden brown and cheese is fully melted.
  10. Transfer to a cutting board, let it rest for a minute, then slice into wedges.
  11. Repeat the process with remaining tortillas and filling. Serve immediately!

Notes

Use leftover roasted chicken for extra flavor or store-bought rotisserie chicken for convenience. Feel free to customize fillings with your favorite vegetables or proteins.
