Description

Delightful BBQ chicken quesadillas filled with savory ingredients and gooey cheese, perfect for any occasion.


Ingredients

  • 2 cups cooked rotisserie chicken, shredded
  • 1 cup BBQ sauce
  • 1 cup corn (canned or frozen)
  • 2 cups shredded cheese (cheddar or Monterey Jack)
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • Optional toppings: sour cream, green onions, cilantro

Instructions

  1. Combine the shredded chicken and BBQ sauce in a bowl until well coated.
  2. Heat a skillet over medium heat and add olive oil.
  3. Place one tortilla in the skillet and layer with 1/2 cup of the chicken mixture, 1/4 cup corn, and 1/2 cup cheese.
  4. Top with another tortilla and cook until golden brown, about 3-4 minutes.
  5. Carefully flip and cook the other side until the cheese is melted.
  6. Remove from the skillet and repeat with the remaining ingredients.
  7. Cut into wedges and serve with optional toppings.
