- 2 cups cooked rotisserie chicken, shredded
- 1 cup BBQ sauce
- 1 cup corn (canned or frozen)
- 2 cups shredded cheese (cheddar or Monterey Jack)
- 4 large flour tortillas
- 1 tablespoon olive oil
- Optional toppings: sour cream, green onions, cilantro
Instructions
- Combine the shredded chicken and BBQ sauce in a bowl until well coated.
- Heat a skillet over medium heat and add olive oil.
- Place one tortilla in the skillet and layer with 1/2 cup of the chicken mixture, 1/4 cup corn, and 1/2 cup cheese.
- Top with another tortilla and cook until golden brown, about 3-4 minutes.
- Carefully flip and cook the other side until the cheese is melted.
- Remove from the skillet and repeat with the remaining ingredients.
- Cut into wedges and serve with optional toppings.
