Description

Delicious BBQ chicken quesadillas filled with smoky flavors and melted cheese, perfect for gatherings or a quick meal.


Ingredients

  • 4 8-inch high-fiber flour tortillas
  • 2 tablespoons barbecue sauce
  • 1 cup shredded cooked chicken breast
  • 2/3 cup reduced-fat shredded Mexican cheese blend

Instructions

  1. Coat a large nonstick skillet with cooking spray and place it over medium heat.
  2. Place one tortilla in the skillet and spread it with half the barbecue sauce.
  3. Distribute half the chicken over the barbecue sauce and then sprinkle half the cheese over it. Cover with another tortilla.
  4. Cook until the cheese begins to melt and the bottom of the tortilla is golden, about 2 minutes.
  5. Carefully flip the quesadilla and cook the other side until golden, 2 to 3 minutes more.
  6. Remove from the pan and place on a cutting board.
  7. Repeat with the remaining ingredients to make another quesadilla.
  8. Cut each quesadilla into 8 wedges using a pizza cutter for easy serving.

Notes

Serve with salsa, sour cream, or extra barbecue sauce for dipping. Customize with additional ingredients like jalapeƱos or bell peppers.
